However, also when you do this, you should heat the milk and help temper the eggs with it. Now, having made this many times, I’ve never added milk – only a little bit of folded in whipped cream. Also, there was no vanilla added. It seemed weird, but there’s a lot of other flavor in this cake. It just seems like a faux pas to me.
Lastly, the author suggests to freeze the Swiss buttercream for some reason. I’m not sure why.
I’m sure this person is plenty capable of executing this. If you know what you’re doing, you can work it out, but if you are a beginner, or someone like my wife, or the girl that I was working with today, there would be very little chance of success.
It turned out ok. I had to fix the mascarpone filling, and I avoided the problem with the swiss buttercream that someone in the comments pointed out.
I don’t want to hurt the person that is putting together the blog. It’s very well done. I just wish they would iterate and improve on their work. Here’s what we ended up with. We didn’t have a proper piping bag, so we couldn’t make the puffs. We opted for chocolate shavings instead of the dense chocolate dusting, but whatever. It tasted plenty fine.
