Fresh pasta can be found in just about any market these days, and cooks in 3–4 minutes in boiling water. It will keep in the fridge for about a week.
Steaming or braising makes quick work of cooking many vegetables, and you don’t need to get a whole pot of water boiling. A half inch of water in the pot with a steamer basket, and you can have a batch of broccoli ready to go in 10 minutes. I’ll also do a reverse-cooking method for green beans. Toss them in a hot pan with a half cup of chicken broth and cover for 5 minutes to get them tender. Then take of the lid, throw in a little oil and some aromatics (like garlic, onion, and/or mushrooms) to sauté for a few minutes to get a a bit of sear on them.
You can always do eggs any number of ways quickly.
I’ll also keep some pre-cooked sausage in the fridge (we like Aidell’s, or smoked kielbasa). Since it is pre-cooked, it just needs to be heated up. You can slice it thin, toss it in the pan with some thin-sliced vegetables (peppers, onions, mushrooms, broccoli… just about anything cut thin), and whip up a one-pan meal in 10–15 minutes.
If you’re doing more careful planning and have a microwave, pre-cooking for the week is a lifesaver. I mentioned meatballs above, but there are lots of meals (soups, stews, etc.) that can be cooked and portioned out in the freezer for quick heating.
