The “pork” is actually thick pork stew, a sofrito made of onions, diced bell peppers, mild green chiles, finely chopped tomatoes or diced canned tomatoes sauteed in achiote infused olive oil, with a lot of garlic, oregano, cumin, culantro, (or twice as much cilantro), salt & pepper. When sofrito is cooked, cubed pork is added & let simmer for a while to get the flavor balanced & let some of the liquid cook down so it’s thick. This is spooned on the masa, two black olives added, it’s rolled up in the banana leaf like a tamale, then that is wrapped in the foil with the edges folded tightly & frozen. To cook, it’s boiled in the foil for approx one hour & served with rice & salad of half lettuce & half chopped cabbage with a dressing of oil, vinegar, & soy sauce, (for example: 4 oz oil, 2 oz vinegar, 2 oz soy)
