What are some foods that look really gross but are actually delicious?
I’m Irish & my husband was Puerto Rican. This was over 50 years ago when he got off the phone, excited because his mother, with his six sisters & their husbands were going to make pasteles. We were going to help too, making a years worth & dividing them up between families & freezing them. I asked what pasteles were. He said “the best thing you’ve ever tasted: green bananas stuffed with pork.” Yeah, no! Sounds gross. They are still one of my favorite foods, along with lobster, dungeness crab, prime rib, bacon, & ice cream. They are the Puerto Rican version of a Mexican tamale. The masa is half grated green banana & half raw grated potato mixed with achiote infused olive oil & spread on a banana leaf laid on top of a piece of aluminum foil instead of a corn husk. The “pork” is actually thick pork stew, a sofrito made of onions, diced bell peppers, mild green chiles, finely chopped tomatoes or diced canned tomatoes sauteed in achiote infused olive oil, with a lot of garlic, oregano, cumin, culantro, (or twice as much cilantro), salt & pepper. When sofrito is cooked, cubed pork is added & let simmer for a while to get the flavor balanced & let some of the liquid cook down so it’s thick. This is spooned on the masa, two black olives added, it’s rolled up in the banana leaf like a tamale, then that is wrapped in the foil with the edges folded tightly & frozen. To cook, it’s boiled in the foil for approx one hour & served with rice & salad of half lettuce & half chopped cabbage with a dressing of oil, vinegar, & soy sauce, (for example: 4 oz oil, 2 oz vinegar, 2 oz soy)

When storing raw prime rib in the refrigerator, it is recommended to keep it in its original packaging or wrap it tightly in plastic wrap or aluminum foil to prevent exposure to air. If you are considering freezing raw prime rib, ensure that the meat is tightly sealed in a freezer-safe container or heavy-duty freezer bag to prevent freezer burn. It is advisable to label the package with the date of freezing to keep track of its shelf life.
To maintain the best quality and flavor of raw prime rib when freezing, it is recommended to use the following storage times as a guide:

Thawing and Cooking

Once the prime rib is fully thawed, it is important to season the meat generously with your favorite seasonings and allow it to come to room temperature before cooking. This step ensures even cooking and enhances the flavors of the meat.
When it comes to cooking a prime rib, there are various methods you can choose from, such as roasting, grilling, or smoking. Regardless of the cooking method, it is crucial to monitor the internal temperature of the meat using a meat thermometer to ensure it reaches the desired level of doneness.
For a tender and juicy prime rib, it is recommended to cook the meat to an internal temperature of 130-135°F for medium-rare or 140-145°F for medium. Remember to allow the meat to rest for a few minutes before slicing to allow the juices to redistribute, resulting in a perfectly cooked prime rib.
