Here is my process:
Start soaking my “Bake-even” strips. (Bake-Even Strips, 6-Piece) – These help my cake layers bake evenly without a big “hump” in the middle.
Cut parchment to the size of the bottom of my cake pan.
Spray the cake pan with “Bakers Joy.” It’s easy. It works. (Yes, using butter and flour or some homemade concoction might save money, but not enough to make up for the time I have to spend on it.)
Lay the parchment in the bottom of the pan. It will stick to the spray.
Spray again, making sure to get all the way up the side of the pan.
Wrap the cake pan in a baking strip.
Pour in the batter, smooth and bash on the tabletop a few times to get any big bubbles out.
Bake.
Cool at least 10–15 minutes.
Run a knife carefully around the outside edge of the cake pan to ensure the sides release smoothly.
Invert the cake pan onto a cake board and give it a couple firm “whacks” on the bottom.
Remove the pan from the cake.
I’ve never had any problems with cakes sticking with this process.
After the cake is freed from the pan, I wrap it securely in plastic wrap and place it in the freezer. You can leave the parchment on while you freeze the cake, or take it off after removing the cake pan. I’ve done it both ways.
If you plan to cut your baked layers to make extra surface area for fillings, don’t let the cake freeze solid before you tackle this portion. A rock-solid frozen cake is even harder to slice than a fresh, warm cake.
You can freeze buttercream between decorating sessions, but DO NOT FREEZE FONDANT. Frozen fondant will “weep” as it thaws and the colors will run. Fondant cakes should be refrigerated.
