Have you ever wondered if you can freeze chile rellenos to enjoy later? This popular Mexican dish is a delicious combination of roasted peppers, cheese, and a light batter. But can you preserve its flavors and textures by freezing it?

What is the best Mexican dish you have ever tried?

I have to nominate chile relleno as my favorite Mexican dish. It’s not one of those gorgeous looking meals, but boy is it tasty. A mild chile, stuffed with cheese, battered, fried and topped with a delightful, slightly spicy tomato based sauce.
Burritos, tacos, enchillada — yes, they’re all good too, but I can never resist ordering the Chile Relleno when I see it on the menu.
They don’t always have them, not that they’re hard to get, but I will say they are not the easiest thing in the world to make at home (which is why I don’t make them all that often).
For those who are daring and don’t mind a little work, I’ll try and take you through the process.
We start with the chile. My first choice is the poblano, a mild chile pepper originating in the State of Puebla, Mexico. I love the flavor and, frankly, the size (which allows me to stuff a bunch of tasty cheese inside — of course, the more, the merrier).

Roast them over an open fire until they get charred, really charred. I know it doesn’t look good at this point, but you’ll just have to trust me on this one.

The roasting process allows you to then easily remove the skin. Usually, I cover the chiles immediately after taking them off the fire. You can put them in a plastic bag or put them into a large bowl and cover them. Carefully, scrape the skin off with a knife or you can use your hands if the skin is really just ready to fall off. The skin removal will provide a nice, softer chili in the final product.

Next step is to create a slit in the chile to make room for the cheese. You need to remove all the seeds. They are hard and will ruin your dish if you don’t get them all out. Toward the stem, there is a very high concentration of seeds that are tough to remove if you use a knife. I would recommend a scissor, which will offer you much better control. Be careful when handling the chile. At this point, they are really soft (from the roasting process), so you easily create an unwanted tear.

You could use slices of cheese to put into the chile. This is how I made it the first time, but I found they were difficult to work with. Out of greed, I probably cut them too big (wanted to get as much as I could in there). On subsequent attempts, I found that grating the cheese (like you’re making hash browns) was easier. I could shape them into a torpedo shaped mound, also allowing me to easily incorporate other ingredients like chopped onions, if I wanted. The torpedo shape was much easier to deal with for the stuffing part. What kind of cheese? I’ve seen a lot of recipes use Jack cheese. Usually, I go to my local Mexican market, tell them what I’m making and they know exactly where to point me. It’s a Mexican branded cheese, but I can’t seem to remember the brand or type.

Close the slit with a toothpick.

Roll chiles in seasoned flour.

Beat three egg whites until stiff. Beat three yolks until creamy (separately). Fold yolks and three tablespoons of flour into whites, add salt to taste. Dip each chile into batter.

Deep fry at 400 degees F for a couple of minutes, until the batter looks cooked.

Chile Relleno Sauce. You should do this step first, then set it aside.
Ingredients
1⁄3; cup corn oil
1 medium onion, chopped
4 garlic cloves, chopped
1⁄3 cup flour
1 ½ cups fresh ripe roma tomatoes, pureed
1 seeded fresh jalapeno peppers, pureed
5 cups water
2 teaspoons salt
1 ½ teaspoons Mexican oregano, crushed
¼ teaspoon finely ground black pepper
1 large bay leaf
1 pinch ground cinnamon
1 pinch ground cloves
Directions
HEAT 1/3 cup corn oil in a medium saucepan over medium-low heat;
CHOP 1 medium onion together with 4 cloves of garlic in a food processor;
SAUTE the onion and garlic mixture in the corn oil until translucent and golden, and almost caramelized.
ADD 1/3 cup flour to the saute mixture;
STIR the mixture as it cooks, until it is deep golden in color (mixture will be paste-like).
PLACE into the large bowl of a food processor enough fresh ripe Roma tomatoes to yield approximately 1 1/2 cups pureed, and one stem-removed seeded fresh jalapeno pepper;
PROCESS both until pulverized.
TRANSFER the sauteed onion and garlic roux from the saucepan into the bowl of the food processor with the tomatoes and jalapeno and blend.

As I said in the beginning, this is on the difficult side of the spectrum to prepare, which is the reason I often just eat it as restaurants. However, if you do make it at home, make a bunch (economies of scale, and all that). They freeze relatively well and you can always eat them later. Enjoy. It’s really a wonderful dish.
